Citrus Brownie Vegan French Toast Muffins (Gluten Free)

Starting the year, week, and month the best way I know. A simple and delicious recipe suing no animal products or gluten... this is a recipe for everyone who loves a good comforting breakfast or snack, why not?


This recipe is gluten free and vegan and high in protein since we are using chocolate pea protein... also low in sugar! And don't worry, it has an amazing flavor (boyfriend approved!) so stick around for full details here!



Anyways, another thing that makes me feel so pumped about spring is the recipes! French toast might be an all year long thing but I think that it's just the perfect recipe that sets the mood for the season especially with those chocolate vegan vibes on this recipe.


This is a twist of a bread pudding casserole, we are stepping up the game and creating a fusion inspired by these amazing and classic recipes; french toast muffins and chocolate brownies. In a delicious skillet, that it is also gluten free, vegan and low carb!



You can see how incredible the textures in these citrus chocolate frecnh toast muffins is! The coconut, almonds, and pumpkin seeds on top are just AMAZING!


For this recipe I simply used Carbonaut, white bread; but wait! This bread is low carb and 100% plant-based... how cool is that? Each slice has only 1 grams of net carbs and 14 grams of fiber. I'm obsessed. Their bread is also available on selected Sprouts and Target!


Keto certified too! That means a lot to me and this is why. For a product be keto certified needs to have specific standards. It's has 1g net carbs, it can't contain hydrogenated oils, artificial ingredients, no maltitol or other artificial sweeteners.   • Flaxseeds are great egg replacements, both work like a sort of glue.

For this recipe I wanted to use keto brownie bars and pea protein to add that creaminess and thickness... and of course, more flavor to the recipe and it was a game changer! The crunch of the brownie bars is just perfect and the pea protein helps with the baking part... it's a game changer to bake with pea protein.

Citrus Brownie Vegan French Toast Muffins

Ingredients



Method

  1. Preheat the your oven at 350F.

  2. Cut into half inch squares the bread and bake for 12 minutes.

  3. Mix the pea protein, ground flaxseed, baking powder and alullose in a bowl.

  4. Add the nut butter, oat milk and mix well.

  5. Stir in the baked bread and chopped keto brownie bars.

  6. Divide the batter into twelve silicone muffin cups.

  7. Top with mandarins.

  8. Bake for 20-22 minutes.

  9. Let cool down and ENJOY!
