Ingredients
1 ½ cups Fiber Gourmet flour blend
1 tsp baking powder
¼ tsp kosher salt
2 tsp vanilla extract
2 tsp lemon zest
¾ cup granulated monk fruit sweetener
¾ cup milk
3 large eggs
½ cup Greek yogurt
Topping:
⅓ cup coconut oil
⅔ cup brown granulated sweetener
2 tbsp milk
1 cup unsweetened shredded coconut

Preheat oven to 350°F (175°C). Grease your pan.
Mix flour, baking powder, and salt.
