Butternut Squash Jalapeño Cranberry Mango Salad

Serves 8
Ingredients
Mango Dressing:
1 cup plain Greek yogurt
1/3 cup Ceres Mango Juice
1 tbsp lime juice
1/2 tsp sea salt
1/8 tsp black pepper
Vegetables:
4 cups chopped butternut squash
4 sliced radishes
4 sliced jalapeños
1 cup chopped lettuce (optional)
Serving:
1/2 cup fresh or dried cranberries
1/3 cup feta cheese
1/4 cup finely chopped cilantro
Instructions
Preheat your oven to 350°F (175°C) in ROAST mode. Arrange the chopped butternut squash, sliced radishes, and jalapeños on a baking tray. Sprinkle with sea salt and black pepper.
Roast the vegetables for 30-32 minutes, until tender and golden brown.
While the vegetables are roasting, prepare the dressing by mixing Greek yogurt, Ceres Mango Juice, lime juice, sea salt, and black pepper in a bowl until smooth.
Once the vegetables are roasted, transfer them to a large bowl with chopped lettuce, if using, and gently toss with the mango dressing. Top with cranberries, feta cheese, and chopped cilantro before serving.!
