Serves 12


Ingredients

  • 1 ⅔ cups gluten-free flour

  • ¼ cup granulated monk fruit

  • 4 scoops Marigold Hot Cocoa Collagen

  • ¼ cup cacao powder

  • 2 teaspoons ginger powder

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 2 large eggs

  • ¼ cup molasses

  • 1 cup Greek yogurt

  • ¼ cup melted coconut oil

  • 2 teaspoons vanilla extract

  • ⅓ cup sugar-free chocolate chips

  • ⅓ cup Marigold keto candied pecans

For the topping:  

  • 1 cup powdered monk fruit

  • 2 tablespoons sugar-free maple syrup

  • 3 tablespoons sugar-free chocolate chips

  • ⅓ cup crushed Marigold keto candied pecans


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, whisk together the dry ingredients: gluten-free flour, monk fruit, collagen, cacao powder, ginger powder, baking powder, baking soda, and salt.

  3. In a separate bowl, combine the wet ingredients: eggs, molasses, Greek yogurt, melted coconut oil, and vanilla. Mix well.

  4. Add the wet ingredients to the dry and stir until just combined. Fold in the chocolate chips and candied pecans.

  5. Pour the batter into a greased loaf pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
