Cranberry Eggnog Pudding Pie

Serves 1-2


Ingredients

Pudding Pie

Toppings

  • 1/4 cup of organic graham cookies

  • 1/4 cup of fresh cranberries

Glaze

  • 1/2 cup of powdered monk fruit

  • 1-2 tbsp of sugar-free eggnog creamer


Instructions

  1. Preheat the oven at 350F.

  2. Blend the ingredients for the pudding pie filling.

  3. Pour over a small baking dish.

  4. Bake for 30-35 minutes, until edges are golden.

  5. Let it cool down, mix the ingredients for the glaze.

  6. Top the pie with te glaze, cranberries and crushed graham cookies.

  7. Enjoy!
