Horchata White Chocolate Protein Muffins

Serves 12 muffins


Ingredients

  • 1 cup of gluten-free flour

  • 4 scoops of Marigold Horchata Collagen Peptides

  • 1 tsp of Crystal Diamond Baking Salt

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 2/3 of RxSugar alullose (MARIA20 for discount)

  • 2 whole eggs

  • 1 tsp of vanilla extract

  • 1 cup of cottage cheese

Toppings

  • 1/3 cup of sugar-free chocolate chips

  • Whipping Cream

  • Cinnamon


Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients.

  3. Blend the cottage cheese

  4. Incorporate the wet ingredients and mix well.

  5. Transfer to 12 silicone baking muffin cups.

  6. Top with white chocolate chips.

  7. Bake for 19-20 minutes and let it cool.

  8. Top the muffins with whipping cream and cinnamon, enjoy!
