Ingredients
Chocolate Cake Layer
1 package of Dilettoso Choc-O-Lotta Gluten-Free Amore Mix
1 cup almond milk
2 large eggs
Ricotta Layer
2 cups ricotta cheese
1/2 block cream cheese
½ cup granulated monk fruit
2 large eggs
2 tsp vanilla extract
Pudding Mix
1¼ cups unsweetened almond milk
1 box sugar-free chocolate pudding mix
1 cup Greek yogurt
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
In a bowl, mix together the chocolate cake layer ingredients until well combined; set aside.
In a separate bowl, blend the ricotta layer ingredients until smooth; set aside.
Pour the chocolate cake batter into the prepared baking dish. Spoon the ricotta mixture over the batter, then bake for 1 hour. Allow it to cool completely.
In another bowl, combine the pudding mix ingredients and beat well. Fold in the Greek yogurt until smooth.
Spread the chocolate pudding mixture over the cooled cake. Refrigerate for at least 2 hours before serving.
