Macaroon Girl’s Scout Cookies

Serves 6 cookies


  • 1 1/2 cup of unsweetened shredded coconut

  • 1/2 cup of granulated monk fruit

  • 1/4 cup Artisana Organics Pecan Butter

  • 1/4 cup of egg whites

  • 2 tbsp of sugar-free caramel syrup

  • 1/3 cup of sugar-free chocolate chips


  1. Preheat the oven at 375F.

  2. Mix all the ingredients in a large bowl and create 6 medium sized cookies.

  3. Let them cool in the fridge for 10-20 minutes.

  4. Bake for 9-11 minutes.

  5. Enjoy!
