This recipe overall is gluten-free, low sugar and low carb as well. I used the cashew butter from Artisana Organics to create some magic along with some strawberries, of course, some matcha for these fluffy pancakes.

These keto and gluten-free pancakes are perfect to make no matter the year and to make for brunch, breakfast or dessert. The recipe it's easy to make and extremely delicious! It's an unmissable recipe that everyone will love and will also nourish your body... dairy-free and of course also a great source of antioxidants and healthy fats.

Super fluffy and soft pancakes, these were my dessert of a lovely Saturday... licked the plate clean! Definitely planning on sharing these with my boyfriend on our next brunch haha, this time it was hard to share!

Matcha Pancakes with Strawberry Cashew Sauce

Serves 1-2


  • 2/3 cup low carb pancake mix

  • 3 tbsp of matcha

  • 1/2 cup of egg whites

  • 1/2 cup of unsweetened almond milk

  • 2 tsp of vanilla

  • 1/4 cup of granulated monk fruit

Strawberry Cashew Sauce

  • 3 strawberries

  • 1 tbsp of Artisana Organics Raw Cashew Butter

  • 1/4 cup of sugar-free maple syrup (or regular one)


  1. Mix the pancake mix with monk fruit, vanilla, matcha, egg whites and almond milk. Stir well.

  2. Pour over a pancake maker (like Dash) or cook in a skillet and cook for 4-5 minutes.

  3. Heat the strawberries for 20 seconds in the microwave and mix with the rest of the ingredients.

  4. Serve pancakes with sauce and enjoy!
