Maple Pecan Oatmeal Cookie French Toast Casserole

Serves 4-6
Ingredients
2 of ROYO Cinnamon Raisin Bagels
1 whole egg
1/4 cup of sugar-free maple syrup
1 tsp of cinnamon
1/2 cup of unsweetened almond milk
1 tsp of vanilla extract
2 tbsp of chopped pecans
2 tsp of finely shredded unsweetened coconut
Toppings
Sugar-Free Glaze (Powdered Monk Fruit + Sugar-Free Maple Syrup)
2 tbsp of chopped pecans
2 tsp of finely shredded unsweetened coconut
Instructions
Preheat your oven to 350°F (175°C).
Cut the bagels into cubes and place them in a mixing bowl.
In a separate bowl, mix the egg with sugar-free maple syrup, almond milk, vanilla extract, cinnamon, chopped pecans, and shredded coconut.
Pour the mixture over the bagel cubes and ensure they are well soaked.
Transfer the soaked bagels into a greased baking dish.
Bake for 25-30 minutes, until lightly golden and set.
Once baked, drizzle with the sugar-free glaze and sprinkle with additional pecans and coconut before serving.
