I think that anything tres leches is a winner, but this arroz con leche AKA Mexican rice pudding is another level and just the perfect quick snack or dessert to make when you got no time and perfect not to share since this is single serving as well.


This is my iconic Tres Leches Rice Pudding, this is just a simple and epic combo that you need to make to satisfy that sweet tooth, in a delicious and healthy way... this is not your regular creamy and thick tres leches rice pudding... this is made with healthier ingredients while also being high-protein.



About this Tres Leches Rice Pudding:

This recipe overall is gluten-free, low sugar and vegan friendly as well. I used the cashew from Artisana Organics to create some magic along with some sticky rice, cinnamon, coconut and the combination of the tres leches.


These low-sugar and gluten-free Tres Leches Rice Pudding are perfect to make no matter the year. The recipe it's easy to make and extremely delicious! It's an unmissable recipe that everyone will love and will also nourish your body... sugar-free and of course also a great source of antioxidants and healthy fats.



Better for you rice pudding? Yes please, the perfect healthy twist for a good dessert! The key to have a sustainable healthy life is to preach balance and to also choose better ingredients when you are cooking or baking at home... the ingredients here are a some of the staples that I usually have in my own kitchen.


I am using as sweetened Rx Sugar alullose, a sugar replacement that doesn't cause glucose spikes and it's made from raisins, figs. It's also keto and paleo certified! (MARIA20 for discount)

Tres Leches Rice Pudding

Serves 1


Ingredients

Rice Pudding

  • 1 cup of cooked sticky rice*

  • 1 tbsp of Artisana Organics Cashew Butter

  • 2/3 cup of unsweetened almond milk

  • 1/2 tbsp of shredded coconut

  • 1/4 cup of caramel vegan creamer

  • 2 tbsp of organic whipping cream

  • 2 tsp of cinnamon

  • 1/4 cup of Rx Sugar alullose (MARIA20 for discount)

  • 1 banana

  • 1 tsp of vanilla extract

Toppings

  • 1 tbsp of Artisana Organics Cashew Butter

  • 1/2 tbsp of shredded coconut

  • 1/3 cup of raspberries

Method

  1. Cook the rice, I used my instant pot (1 cup of rice + 2/3 cup of water for 12 minutes in high. Letting the steam loose naturally.)

  2. Mix all the ingredients for the rice pudding in a bowl.

  3. Microwave for 2 minutes. Stir well, and cook again for 1:30 minutes.

  4. Add the toppings and enjoy!

*You can use Jasmine rice... or regular! But highly recommend using sticky rice.
