Ingredients

For the Salad:

  • 1 radicchio, leaves separated

  • ¼ red onion, thinly sliced

  • 4 radishes, thinly sliced

  • ¼ cup cilantro, chopped

  • 3 tbsp roasted pistachios, crushed (for serving)

  • ¼ cup pomegranate seeds (for serving)

For the Citrus Parmesan Dressing:


Instructions

  1. Prepare the Dressing: In a bowl, mix together (3) tablespoons of Nutiva Organic Liquid Coconut Oil, juice of (1) orange, juice of (1) lemon, (3) tablespoons of parmesan cheese, black pepper, seasoned salt, and (1) tablespoon of Nutiva Coconut Aminos until well combined.

  2. Prepare the Vegetables: Wash and slice the radicchio, red onion, and radishes, and chop the cilantro.

  3. Assemble the Salad: In a large bowl, layer the radicchio leaves, red onion, radishes, and cilantro. Drizzle the citrus parmesan dressing over the top, and finish with crushed pistachios and pomegranate seeds.
