Healthier Eggnog Tres Leches Cake

Serves 1 serving


Ingredients

  • 3/4 cup of Beth Blends Gluten-Free Flour (PURELYHL for discount)

  • 1 tsp of baking powdered

  • 1/2 tsp of butter flavoring drops

  • 1 egg

  • 1/2 cup of unsweetened almond milk

  • 1/2 cup of vanilla sugar-free greek yogurt

  • 1 tsp of vanilla extract

  • 2 tbsp of RxSugar Granulated Alullose (MARIA20 for discount)


Tres Leches

  • 1/2 cup of eggnog (I used alcohol-free & dairy-free)

  • 1/2 cup of sugar-free caramel coffee creamer


Cake Frosting

  • 2 laughing cow cheese (room temperature)

  • 1 tsp of vanilla extract

  • 1/3 cup of vanilla greek yogurt

  • 1/2 cup of powdered monk fruit

Instructions

  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the cake and pour into a small baking dish (I used an 5x5 one).

  3. Bake for 30 minutes.

  4. Mix the ingredients for the tres leches.

  5. Beat the ingredients for the frosting.

  6. Once baked trasnfer the cake to a plate, poke some wholes with a fork.

  7. Pour carefully the tres leches mix over the cake, until it gets really soaked.

  8. Decorate with frosting and optional, Christmas sprinkles.
