Peanut Butter Chocolate Apple Loaves (Vegan & Gluten Free)

Peanut butter and chocolate are always a good idea! You just cannot fail a good old classic in a recipe... the ideas are endless and they just keep getting better as the year and seasons go by. This Peanut Butter Chocolate Apple Mini Loafs are the proof!


Also, it's important to mention that these loaves are low sugar, gluten free, vegan and freaking delicious! Just the perfect snack or dessert, contains plenty of protein and without all the sugar since we are using a granulated monk fruit!



About these Peanut Butter Chocolate Apple Loaves

I kept it simple and very convenient. I used a peanut butter, chocolate chips, apples and my favorite plant based protein powder for the base. The inspiration from this recipe was nothing but the season, I'm feeling all the fall vibes now!


Apple cinnamon recipes are good enough on its own... add some peanut butter and you get some magic! A delicious loaf recipe using sprouted apple cinnamon oats, some of low carb seed based granola that has coconut, chocolate and hazelnuts.


Protein Baking Hack!

I also added some plant based protein in vanilla flavor it add some volume, flavor and nutrient density, in this also adds some fluffiness to the loaves and a more satiating sensation thanks to those amino acids... building blocks to our muscles!


Adding protein is a great way to keep things low carb, add volume, flavor and to keep it gluten free, I typically use it as a substitute for coconut flour too since both tend to absorb more water.

The combination of the apple and vanilla protein powder is just a little extra touch that makes a difference on the texture too! Since it's a pea protein base it tends to absorb a little bit more of liquid making the mixture denser and thicker.


Plus the flavor of peanut butter along with the apple cinnamon oats in this loaf mix is just a DREAM! It's just a dream fall combination. We also including some texture here with the hemp seeds, granola and chocolate chips.

Overall, these are the ingredients needed for these Peanut Butter Chocolate Apple Loaves:

  • Nuzest Plant-Based Protein - Vanilla

  • Apple Cinnamon Sprouted Oats

  • Cinnamon

  • Hemp Seeds

  • Ground Flaxseed

  • Cinnamon Infused Tea

  • Peanut Butter

  • Apples

  • Seed Based Granola


You can see that the ingredients are pretty basic, and the method is the easiest thing to do! Since peo protein tends to absorb more water I kept the portion to 1/2 cup, it also adds thickness and volume to the base of the loaves.


For the toppings I decided to use some seeds and nuts, specially chocolate chips for that classic combo we love: CHOCOLATE PEANUT BUTTER! We are getting some antioxidants, zinc, magnesium and some iron from the nuts and seeds.



Sweet and low carb!

To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

The end result

It's hard to resist the combination of chocolate peanut butter and apple cinnamon... plus the fact that we also added some slices of apples and nuts from the granola, I'll just put it that way! Specially when we are talking about a recipe that it's also vegan friendly and gluten free! Who would have known... this is just a recipe that you have to try and share with your friends.

Peanut Butter Chocolate Apple Loaves

Serves 4 serving


Ingredients

Bread

Toppings

  • 1/4 cup of low carb chocolate chips

  • 1/4 piece of apple

  • 1/4 cup of chocolate seed grain free granola


Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the loaves.

  3. Add the peanut butter and tea, mix well.

  4. Pour the batter into 4 little baking loaf silicone molds.

  5. Add the sliced apples, granola and chocolate chips.

  6. Bake for 18-20 minutes minutes.

  7. Enjoy!
