These are my iconic Pineapple Pecan Carrot Oat Bars, these are just a simple and epic combo that you need to make to satisfy that sweet tooth, in a delicious and healthy way... this is not your regular carrot cake oatmeal bars... this is made with healthier ingredients while also being gluten-free.



About these Pineapple Pecan Carrot Oat Bars:

This recipe overall is gluten-free, low sugar and keto as well. I used the almond butter from Artisana Organics to create some magic along with some RxSugar alullose (MARIA20 for discount), and of course, some pineapple, pecans and raisins for that special carrot cake essence.

Pineapple Pecan Carrot Oat Bars

Serves 9 bars


Ingredients

  • 1 cup of oats

  • 1 cup of low carb pancake mix (used Prozis- PURELYHL for discount)

  • 1 tsp of baking powder

  • 3/4 cup of pumpkin puree

  • 2 tsp of vanilla extract

  • 1 cup of shredded carrots

  • 1 cup of chopped pineapple

  • 1/4 cup almond butter

  • 1/2 cup of water

  • 1/3 cup of raw pecans

  • 1/3 cup of raisins

Method

  1. Preheat the oven at 375F.

  2. Mix all the dry ingredients in a large bowl.

  3. Add the pumpkin puree, vanilla, water, shredded carrot, pineapple and part of the raisins and pecans.

  4. Pour the batter into a 8x8 baking dish. Top with the rest of the pecans and raisins.

  5. Bake for 30 minutes.

  6. Let it cool down, cut into 9 pieces, and enjoy!
