This recipe overall is gluten-free, low sugar and vegan friendly as well. I used the walnut butter from Artisana Organics to create some magic along with some rose petals, freeze dried strawberries, gluten-free pancake mix, and of course, some honey.

Chocolate Caramel Pistachio Carrot Cake

Serves 6-10 slices



  • 1 1/4 cup of gluten-free pancake mix

  • 1 tsp of baking powder

  • 1/4 tsp of cardamom

  • 1 tsp of cinnamon

  • 2/3 cup of Rx Sugar alullose (MARIA20 for discount)

  • 1 banana

  • 1/2 cup of Artisana Organics Walnut Butter

  • 1/4 cup of real honey

  • 2 tsp of vanilla extract

  • 1/2 cup of water


  • 1/4 cup of freeze dried strawberries

  • 2 tbsp of dried rose petals


  1. Preheat the oven at 325F.

  2. Mix all the all the dry ingredients for the bread.

  3. Add the wet ingredients and mix again.

  4. Transfer to a silicone loaf baking dish.

  5. Add the toppings

  6. Bake for 32-35 minutes.

  7. Let it cool down, slice into 6-10 slices, enjoy!
